Ingredients for Paneer Butter Masala :

  • 250g paneer (Indian cottage cheese), cubed
  • 3 large tomatoes, roughly chopped
  • 2 onions, finely chopped
  • 1-inch piece of ginger, grated
  • 4 cloves of garlic, minced
  • 1 green chili, finely chopped (adjust according to spice preference)
  • 1/2 cup cashew nuts, soaked in warm water for 20 minutes
  • 2 tablespoons butter
  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon Kashmiri red chili powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon sugar
  • 1/2 cup heavy cream
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

Step 1: Prepare the Cashew Tomato Paste

  1. Drain the soaked cashew nuts and transfer them to a blender.
  2. Add the chopped tomatoes to the blender along with a pinch of salt.
  3. Blend until you get a smooth paste. Set aside.

Step 2: Cook the Onions

  1. Heat 1 tablespoon of butter and 1 tablespoon of oil in a pan over medium heat.
  2. Add the finely chopped onions and sauté until they turn golden brown.

Step 3: Add Aromatics

  1. Once the onions are golden brown, add the grated ginger, minced garlic, and chopped green chili to the pan.
  2. Sauté for another minute until the raw smell disappears.

Step 4: Add Spices

  1. Now, add the cumin seeds, Kashmiri red chili powder, garam masala, turmeric powder, and sugar to the pan.
  2. Mix well and cook for a minute to let the spices release their flavors.

Step 5: Add Cashew Tomato Paste

  1. Pour in the prepared cashew tomato paste into the pan.
  2. Stir well to combine all the ingredients.

Step 6: Cook the Gravy

  1. Cook the gravy on medium-low heat for about 8-10 minutes until it thickens slightly and the raw taste of the tomatoes disappears.
  2. Add salt according to your taste preferences.

Step 7: Add Paneer and Cream

  1. Once the gravy reaches the desired consistency, gently add the cubed paneer into the pan.
  2. Pour in the heavy cream and stir gently to coat the paneer evenly with the creamy gravy.
  3. Let it simmer for another 2-3 minutes, allowing the flavors to meld together.

Step 8: Finish with Butter

  1. Finally, add the remaining tablespoon of butter to the pan.
  2. Stir well until the butter melts and combines with the gravy.

Step 9: Garnish and Serve

  1. Turn off the heat and garnish the Paneer Butter Masala with freshly chopped coriander leaves.
  2. Serve hot with naan, roti, or steamed rice.
